Sweetcorn & Avocado Salsa

This fresh and colourful salsa is the perfect accompaniment to your BBQ this summer.


190g tinned sweetcorn

1 medium avocado, peeled, stoned and diced into 1-cm cubes

200g ripe cherry tomatoes, quartered

3 spring onions, finely sliced

½-1 medium-red chilli, deseeded and finely chopped

2 garlic cloves, finely chopped zest and juice of 1 lime

Large pinch of salt and freshly ground black pepper

Handful coriander leaves, roughly chopped

Make the sweetcorn and avocado salsa by mixing all the salsa ingredients together in a medium bowl. Season with salt and pepper.
