Spicy Egg Mayo Sandwich
An Asian take on the traditional egg mayonnaise sandwich. Creator: Mr Nick Skinner
Ingredients
- Genius white or brown bread
- Butter (has to be butter, not spread!)
- Free-range medium egg (1 egg per round of sandwiches)
- Freshly made Mayo or good quality ready-made
- Mustard
- Cress
- Ground paprika
- Ground coriander
- Ground Cumin
- Salt and freshly ground black pepper
Method
- The egg should be hard-boiled so that the yolk is still soft. Place eggs in pan of water and bring to the boil. simmer for 3 minutes, turn off the gas and leave the eggs to cool in the water. When cold peel off the shell and roughly chop them in a bowl.
- Add sufficient mayo to make the mixture spreadable, add a pinch of each spice, a grind of pepper and salt to taste. Mix a little bit and then throw in as much fresh mustard cress as you fancy.
- Butter both slices of bread
- Add the filling
