Spicy Egg Mayo Sandwich

An Asian take on the traditional egg mayonnaise sandwich. Creator: Mr Nick Skinner

Ingredients

  • Genius white or brown bread
  • Butter (has to be butter, not spread!)
  • Free-range medium egg (1 egg per round of sandwiches)
  • Freshly made Mayo or good quality ready-made
  • Mustard
  • Cress
  • Ground paprika
  • Ground coriander
  • Ground Cumin
  • Salt and freshly ground black pepper

Method

  1. The egg should be hard-boiled so that the yolk is still soft. Place eggs in pan of water and bring to the boil. simmer for 3 minutes, turn off the gas and leave the eggs to cool in the water. When cold peel off the shell and roughly chop them in a bowl.
  2. Add sufficient mayo to make the mixture spreadable, add a pinch of each spice, a grind of pepper and salt to taste. Mix a little bit and then throw in as much fresh mustard cress as you fancy.
  3. Butter both slices of bread
  4. Add the filling
  5. Enjoy...........
