Healthy Bacon Sandwich with a Cheesy Avocado Twist

A healthy, low fat, nutritious, gluten-free, tasty sandwich perfect for breakfast, lunch or brunch or any other time of the day. Creator: Mrs Julie Burrows

Ingredients

  • 2 slices of Genius bread
  • 2 teaspoons of low fat cream cheese
  • 1 avocado, sliced
  • 2 slices of lean bacon, char grilled

Method

  1. Take 2 slices of Genius bread
  2. Spread both slices generously with low fat cream cheese (no butter or margarine required)
  3. On one of the slice place slices of freshly cut avocado on top of the cheese
  4. Place on top of the avocado 2 slices of lean char grilled bacon
  5. Place 2 slices of lean bacon in a grill pan and cook on the hob on a medium heat for 5 minutes, turning once.
  6. Place the cooked bacon on top of the avocado filing
  7. Put remaining slice of bread on top
  8. Cut sandwich, sandwich now ready to eat.
