Grilled Italian Deli Sandwich

A taste of Italy: Warm pepperoni, salami and prosciutto, layered with marinated peppers, sun-dried tomatoes and olives layered on thick, hearty slices of grilled Genius bread. Creator: Ms Patricia Gaccione

Ingredients

  • Genius bread (either pre-sliced, or thick crusty outside slices)
  • Italian deli meats (pepperoni, proscuitto, salami, as desired)
  • Various marinated vegetables as preferred (We have included roasted peppers, artichokes, and grilled courgettes)
  • Mixed salad greens
  • Olive oil
  • Toasted pine nuts
  • Salt & pepper
  • Cheese, a hard Italian type or fresh mozzarella, as preferred (optional)

Method

  1. For the bread, you need the sturdy ends, or top and bottom crusts from a loaf of Genius unsliced bread.
  2. Brush the inside of the bread lightly with olive oil and grill both sides of each piece of bread until golden brown.
  3. Meantime, on a plate in the microwave, warm the meats and vegetables slightly. (Use paper towels to blot away any oil or marinade.)
  4. Toast a couple of tablespoons of pine nuts in a dry non-stick skillet until lightly brown, shaking the pan once or twice to prevent burning.
  5. Layer the greens, meats and veggies (and cheese, if desired) on the toasted bread. Add pine nuts, and a quick drizzle of olive oil, if desired.
  6. Sprinkle with salt and freshly ground pepper, and serve warm.
  7. Enjoy!
