Grilled Italian Deli Sandwich
A taste of Italy: Warm pepperoni, salami and prosciutto, layered with marinated peppers, sun-dried tomatoes and olives layered on thick, hearty slices of grilled Genius bread. Creator: Ms Patricia Gaccione
Ingredients
- Genius bread (either pre-sliced, or thick crusty outside slices)
- Italian deli meats (pepperoni, proscuitto, salami, as desired)
- Various marinated vegetables as preferred (We have included roasted peppers, artichokes, and grilled courgettes)
- Mixed salad greens
- Olive oil
- Toasted pine nuts
- Salt & pepper
- Cheese, a hard Italian type or fresh mozzarella, as preferred (optional)
Method
- For the bread, you need the sturdy ends, or top and bottom crusts from a loaf of Genius unsliced bread.
- Brush the inside of the bread lightly with olive oil and grill both sides of each piece of bread until golden brown.
- Meantime, on a plate in the microwave, warm the meats and vegetables slightly. (Use paper towels to blot away any oil or marinade.)
- Toast a couple of tablespoons of pine nuts in a dry non-stick skillet until lightly brown, shaking the pan once or twice to prevent burning.
- Layer the greens, meats and veggies (and cheese, if desired) on the toasted bread. Add pine nuts, and a quick drizzle of olive oil, if desired.
- Sprinkle with salt and freshly ground pepper, and serve warm.
