Genius Bruschetta With Tomato & Borlotti Bean

Ingredients

  • Slices of Genius bread
  • 250g cherry tomatoes
  • Olive oil
  • Finely chopped garlic.
  • Salt and freshly ground black pepper to season
  • 200g borlotti beans
  • 1 tablespoon of red wine vinegar.

Method

  1. To make bruschetta with Genius Bread, either simply cut sliced white bread diagonally across into large triangles or cut out large rounds from each slice with a pastry cutter.
  2. Toast or bake the prepared bread on a baking tray at 200’C/400’F for 10 minutes or until golden brown.
  3. Toss cherry tomatoes with olive oil and finely chopped garlic.
  4. Season with salt and freshly ground black pepper. Roast at 200’C for 15 minutes.
  5. Gently fry a can of drained can of borlotti beans in 1 tablespoon of olive oil and 1 tablespoon of red wine vinegar.
  6. Combine with the roasted tomatoes.
  7. Arrange on the bruschetta and sprinkle with chopped parsley. Serve immediately.
