Boiled egg and toast soldiers
Toasted, buttered and sliced into thin strips, both white and brown Genius Gluten Free bread makes delicious “soldiers” to dip into your boiled egg.

Ingredients
- 2 medium fresh, free range or organic eggs
- 4 slices of White or Brown Genius Gluten Free Bread
- Unsalted butter for spreading
- Salt and freshly ground black pepper
Method
- Bring a medium pan of salted water to the boil.
- When the water is at a rolling boil, gently lower the eggs into the water on a spoon. Reduce the heat so that the water is gently simmering. For a perfect runny yolk cook the eggs for exactly 5 minutes.
- While the eggs are cooking, toast the bread and spread generously with butter. Cut each buttered slice into five thin “soldiers” and pile onto a medium sized plate next to an egg cup.
- When the eggs are cooked, lift them out of the water and into the egg cups with a slotted spoon. Serve immediately.
