Ingredients

4 Slices Genius Joy-Full Artisan Seeded Cob

4 Eggs

250ml live kefir yoghurt

4 spring onions

2 Tbsp. extra virgin olive oil

2 tsps of Dukkah herb and spice blend

Juice of 1/2 lemon

1 Clove garlic peeled and finely chopped

 

Method

1. Brush both sides of our soft and tasty gut lovin' gluten free bread with olive oil, cut one garlic clove in half and rub across the bread. Season gently with salt and pepper and bake in an oven preheated to 200’C for 5-10 minutes or until golden brown.

2. Meanwhile, bring a pan of water to the boil and poach your eggs.

3. In a bowl, whip thick kefir yogurt and lemon juice.

4. To serve, add a generous dollop of yogurt, using the back of a spoon, create a well for your eggs to sit in.

5. Add your poached eggs and a generous sprinkle of chopped spring onions and dukkah mix.

6. Finish with your gluten free garlic toast for a prebiotic packed gut lovin' breakfast. Serve straight away.
