Gluten-Free Haggis
With Burns' Night just round the corner, Scottish supermarket shelves are full of haggis, neeps and tatties (that's mashed turnip or swede and potatoes to the uninitiated) in preparation of honoring the great poet Robert Burns.
However, for those on a gluten-free diet hunting out a gluten-free haggis can prove difficult and frustrating, so when we saw last week that family-run mail-order butcher Macbeth’s had discovered a new species of haggis, the Scoticus Glutenless, we knew we had to give it a try.
Arriving into the office via courier in time for us to cook for lunch, our Scoticus Glutenless was served up with the obligatory neeps and tatties and presented to the Genius team. The office plunged into silence as everyone tucked in and enjoyed this annual Scottish delicacy. It was met with a resounding thumbs up and comments such as “truly scrumptious” and “are you sure there’s none left?!” In our opinion it’s a very strong rival to its gluten-plus Clansman brother, and definitely outshines the supermarket gluten-plus species.
Macbeth’s haggis recipe is top secret but they say that it’s made using their usual recipe with some tweeks and is put into a natural casing. Herbs and spices are aplenty giving it quite a kick but this only added to the flavor. Due to its recent discovery it’s not yet certified according to the newly introduced gluten-free legislation but is made with no gluten containing ingredients. The Scoticus Glutenless is made in two sizes - the big 2kg Chieftain (feeds 8-10) and the smaller 750g Clansman (feeds 3-4).
